Brinjal Chutney Recipes

Ingredients for Brinjal Chutney – आवश्यक सामग्री .

Brinjal – 2 (big size)
Oil – as required
4 – Dry Red chillies
Cumin seeds – 1 tea spoon
Mustard seeds – 1 tea spoon
Asafoetida – 1/2 tea spoon
Onion – 2 (pieces)
4 – Green chillies
2 Curry leaves
Water – 1 1/2 cup
(1 T spoon) Tamarind paste
Jaggery – ½ cup
Sugar – 1 tea spoon
Turmeric powder – 1/4 tea spoon
Red chilli powder – 1/4 tea spoon
Salt – to taste

How to Make Brinjal Chutney

★ Directly cook brinjals on stove. After cooling, remove brinjal skin and mash them. Heat 2 tea spoons if oil in a pan. Add dry red chillies, cumin seeds, mustard seeds, asafoetida and fry them. After that add onion pieces, green chillies, curry leaves and cook them. Now add mashed brinjal, tamarind paste, jaggery, sugar, turmeric powder, red chilli powder, salt, water and cook for 10 mins, keep its consistency as you desire. Tasty Brinjal Chutney is ready.
