Dum Murgh Recipe

Ingredients for Dum Murgh – आवश्यक सामग्री

चिकन – 1 kilo (Chicken)
अदरक लहसुन – 50 gm (Ginger, garlic)
हरी मिर्च – 8 (Green chilli)
प्याज़ – 250 gm (Onion)
दही – 200 m.l (Curd)
बादाम – 1 1/2 T spoon (Almonds)
काजू – 1 1/2 T spoon (Cashew)
चिरोंजी (चारोली ) – 1 1/2 T spoon (Buchanania lanzan)
लाल मिर्च पाउडर – 1 T spoon (Red chilli powder)
हल्दी – 1/4 T spoon (Turmeric powder)
गरम मसाला – 1/2 T spoon (Garam masala)
इलाइची पाउडर – 1/2 T spoon (Cardamom)
पुदीना – 1 bunch (Mint leaves)
धनिया पता – 2 or 3 Table spoon बारीक़ कटा हुआ (Coriander leaves – 2 or 3 table spoon (finely chopped))
तेज पता – 2 (Bay leaf)
दालचीनी – 2 इंच का टुकड़ा (Cinnamon stick – 2 inch piece )
तेल – अवयस्कता अनुसार (Oil)
नमक – स्वादानुसार (Salt)
खोया -1 1/2 T spoon (khoya)(Mawa )

How to Make Dum Murgh – विधि

★ चिकन पीसेस को पानी से साफ कर लीजिये.

★ अदरक, लहसुन, हरी मिर्च, प्याज़, बादाम, काजू, चिरोंजी, लाल मिर्च पाउडर, हल्दी, गरम मसाला, इलाइची, तेज पता, दालचीनी, पुदीना, खोया इन सब को मिला कर बारीक़ पीस लीजिये.

★ कड़ाई में तेल डाल कर गरम करे, अब उसमे पिसा हुआ मसाला डाल कर 5 मिनट भुने, अब दही डाल कर 10 मिनट तक भुने, अब चिकन डाल कर मिलाये और ढककर धीमी आंच पर 20 मिनट पकाये, अब करी को एक बाउल में निकल लीजिये ऊपर से धनिया पता से सजाये.गरमा गरम दम की मुर्ग़ खाइये और परोसिये.

★ (note) दम देते समय पकने वाले बर्तन के ढक्कन को गुंथे हुये आटे से बन्द कर देते है ताकि इसकी बाप बहार न निकले, लेकिन यदि आपके पेन का ढक्कन अछि तरह फिट हो जाता है तो आप इसे बिना गुंथे हुये आटे से बन्द किये भी बना सकते है.

Dum Murgh Recipe In English

★ Wash chicken with water.

★ Grind ginger garlic, green chilli, onion, almonds, cashew, chironji, red chilli powder, turmeric powder, garam masala, cardamom, bay leaf, cinnamon stick, mint leaves, khoya together in grinder to fine powder.

★ Heat oil in a pan. Add masala powder and fry for 5 mins. Add curd and fry for 10 mins. Now add chicken and mix, cover and cook on low flame for 20 mins. Take curry in to bowl, garnish with coriander leaves. Tasty Dum Murgh is ready.

★ Note: While cooking seal the lid of the vessel in which you are steaming chicken with dough so that steam will not go out or if the lid of the pan is fitting perfectly then there is no need to seal lid with dough.
